Madison Beach Hotel Hosts Chef Dinner

The event, scheduled for Saturday, September 11 at 7 p.m., is part of an on-going epicurean series at the hotel.

The evening includes a welcome reception with cocktails on the beach (weather permitting) followed by a multi-course dinner and concludes with house-made pastries and desserts by Pastry Chef Sylvain Pett.

Each course is paired with wine or a cocktail.

This ticketed event begins promptly at 7 p.m. and has limited seating, capped at eight people per table.

Guests must attest to being fully vaccinated for COVID to attend and participate in this event.

About Chef Stephen Love

Chef Love specializes in classic French methods and techniques, using seasonal ingredients while incorporating global culinary fusion. With an overarching Mediterranean base, he enjoys designing unique blends between French and other cultures, like Japanese, Chinese, Italian, or even Tex-Mex. Integrating his Mediterranean influence, he often works with seafood using fresh herbs and finding innovative ways to enhance flavor.

“My favorite dish to create has got to be risotto,” said Chef Love. “It takes so much care and attention. To make it perfect, you have to literally guide the cooking process for twenty-five minutes. You need to really understand how the rice kernel changes.”

About Pastry Chef Sylvain Pett

Chef Pett has extensive international experience designing modern and traditional pastries, confections, and desserts for restaurants, bakeries, and hotels in Switzerland, France, Dubai, and the United States.

He was Executive Pastry Chef for Hotel Sources des Alpes, Relais & Chateaux in Leukerbad, Switzerland, at 2 Michelin Star Restaurant Kammerzel in Strasbourg, France, and at the Sheraton Hotel in Dubai. Pett was Pastry Chef at Restaurant Metairie and Windows On The World in New York City.

Pett trained and apprenticed in France where he earned his diploma in manufacturing pastries, breads, chocolate, frozen desserts, and confections.
